Food Geek Friday: Italian Salsa Cruda
This past weekend I revisited my local farmers market. I hadn't been in quite some time because, quite frankly, the winter offerings don't do much for me. Anyways, I decided to check things out since our warmer weather produce starts fairly early here. I came into some luck - tomatoes! Admittedly, I'm hit or miss when it comes to tomatoes. Sometimes I love them. Sometimes I'm just not into it. And I'm NEVER into the seeds. Tomato guts gross me out.
But I digress...
So there they were. Beautiful tomatoes speaking to me. I remembered this recipe I saw last year and HAD to try it!
And I'm so glad I did. It was a gorgeous spring day outside and after prep, my hands smelled like summer. Good times.
Italian Salsa Cruda adapted from New Nostalgia
- 3 medium tomatoes, seeded and cut into bite size pieces
- handful fresh Italian parsley, chopped
- handful fresh basil, chopped
- 1 garlic clove, minced
- 1/4 cup extra virgin olive oil
- salt and pepper to taste
- grated parmigiano-reggiano to top
Toss all but cheese together with your hands and let stand for 30 minutes. Serve over pasta. Top with cheese.
Side note: Make only enough for what you need. I made too much and it was NOT as good leftover. Also, make sure not to use too much garlic. Unless you're REALLY into raw garlic.
