Food Geek Friday: Slop, Slop, Sloppy Joes

Whenever I know I'm going to have a busy week, I cook something on Sunday so I can have a quick and easy meal without needing to think about it or hit a drive-thru. I'd received an email mentioning Sloppy Joes and the craving kicked in. Needless to say, Sloppy Joes became my pinch hitter this week.

Sloppy Joes

  • 1 pound  ground beef
  • 1/2   small onion, finely chopped
  • 1 8oz. can no-salt-added tomato sauce
  • 2 tablespoons salsa
  • 1 tablespoon distilled white vinegar
  • 1 1/2 teaspoons Worcestershire sauce
  • 2 teaspoons sugar
  • 1/4 teaspoon sriracha
  • Hamburger buns
1. In a large skillet, crumble in ground beef and add in onion. Cook over medium heat for eight minutes, stirring occasionally.
2. Add tomato sauce, salsa, vinegar, Worcestershire, sugar and sriracha. Mix well, breaking up beef with a wooden spoon. Simmer on medium-low, uncovered, for 10 minutes, stirring occasionally.
3. Spoon equal portions of meat mixture onto hamburger buns and eat. 
This dish is even better leftover. I also used it as a pasta sauce. Enjoy!
