Food Geek Friday: Microwave Brownies

It's spring. It's April. Let's have a little treat! I love this because it's quick and easy, with items I usually have on hand. Plus, it's individually sized so that I'm not tempted to eat a whole batch at once. Because sometimes I reeeeally want to.

Microwave Brownie

Original recipe

  • 4 tbsp flour
  • 4 tbsp sugar
  • 2 tbsp unsweetened cocoa
  • dash of salt
  • 2 tbsp vegetable oil
  • 2 tbsp water
  • 1/3 tsp vanilla

Healthier version - (how I usually make it)

  • 2 tbsp white flour
  • 2 tbsp wheat flour
  • 2 tbsp unsweetened cocoa
  • dash of salt
  • 2 tbsp olive oil
  • 2 tbsp water
  • 1/3 tsp vanilla
  1. Put dry ingredients in the mug and give them a stir.
  2. Add wet ingredients to mug and mix everything together.
  3. Microwave for 1 - 1 1/2 minutes.

Feel free to add whipped cream, ice cream or any lovely additions of your choice. I've also made this with chili powder and cinnamon for some kick. I really liked it with some brandy whipped cream. Play around and see what you like. This dish isn't pretty (hence no pic) but it's a solid base with which to get creative or enjoy on its own.
