Food Geek Friday: Apple and Brie Quesadillas

I love quesadillas. They're an easy way to use up leftovers and make a super-quick meal. I've done all sorts of combinations from typical Mexican flavors to peanut butter and jelly. When I first came across this recipe, it included arugula and a whole bunch of other ingredients. The first time I made it, I included the arugula but didn't bother with most of the other ingredients. In the end, I prefered the simplicity of the quesadilla this way.

Apple and Brie Quesadillas

Serves 1

  • 2 tortillas
  • brie
  • thinly sliced apple
  • butter
  1. Spread each tortilla with brie.
  2. Line apple slices along half of each tortilla and fold over.
  3. Sautee in a pan with a little butter over medium heat until tortillas are brown and crispy and the cheese is melted.
