Food Geek Friday: Sausages with White Beans in Tomato Sauce
Last week started the channelling of my inner Italian grandma with cannellini beans. This week I continue to channel her by building off of that recipe and turning it into this one. It's such wonderful comfort food and only gets better as leftovers.
Sausages with White Beans in Tomato Sauce Adapted from Bon Appetit
- 1 tbs olive oil
- 2 garlic cloves, peeled, crushed
- 3 whole mild Italian sausages
- 3 cups cooked white beans with 1/4 cup reserved cooking liquid
- 1 8oz can tomato sauce
- 2 large fresh sage sprigs
- 1/2 cup (or more) water
Heat oil in large skillet over medium heat. Add garlic. Sauté garlic until golden, about 2 minutes.
Add sausages; sauté until browned, about 5 minutes.
Add 1/4 cup reserved bean cooking liquid, tomato sauce and sage. Simmer 5 minutes.
Add beans and 1/2 cup water. Cover and simmer until sausages are cooked through, adding more water by bit by bit if dry, about 30 minutes. Uncover and simmer until sauce thickens, if desired. Season with salt and pepper.
