Food Geek Friday: Blackberry Bourbon No-Bake Mini Cheesecakes
This recipe has been kicking around in my recipe binder for a while, just waiting for the moment it was made. When I saw the most beautiful blackberries at the farmers market, I knew it was time. Because I love to pair up berries and bourbon, a little hit of bourbon seemed to find its way into the dessert too. That they're individually sized and no-bake in the summer heat just makes them perfect for parties are any little occasion - like Tuesday. You can guarantee I'll be making these often. Blackberry Bourbon No-Bake Mini Cheesecakes Adapted from Food Network
- 1 pint blackberries
- 12 ounces softened cream cheese, (1 1/2 (8-ounce) bricks)
- 2/3 cup sour cream
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 tbs bourbon
- 6 individual graham cracker crusts
- Put all ingredients (except graham cracker crusts and a few berries) in food processor and process until smooth.
- Using rubber spatula, fill pie tins.
- Garnish with berries.
I tweeted when I tested this recipe out and it caught the eye of designer and TV personality Courtney Cachet, who requested the recipe. Imagine my excitement when not only did she love the recipe, but she made it for one of her television appearances on summer entertaining! She even gave me a little shout-out on her Facebook page!
I made these thanks to my buddy and Cachet Page regular, Melinda Massie! I used light cream cheese, light, light sour cream and half splenda/sugar, no berries. It is sooooo good! Thanks Melinda!!
