With Memorial Day this weekend and fresh blackberries at my farmers market, I'm bringing one back from the archives: Blackberry Bourbon No Bake Mini Cheesecakes. Enjoy!
Blackberry Bourbon No-Bake Mini Cheesecakes
Adapted from Food Network
- 1 pint blackberries
- 12 ounces softened cream cheese, (1 1/2 (8-ounce) bricks)
- 2/3 cup sour cream
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 tbs bourbon
- 6 individual graham cracker crusts
- Put all ingredients (except graham cracker crusts and a few berries) in food processor and process until smooth.
- Using rubber spatula, fill pie tins.
- Garnish with berries.
