Food Geek Friday: October #Unprocessed and Mocha and #PSL Variations of Chia Pudding

Are you participating in October Unprocessed? Between this and the fall challenge I'm participated in at Urban Yoga, I've been playing around with a variety of things I normally wouldn't touch. Like chia seeds.

Yes, *those* chia seeds.

Sing it with me, "CH-CH-CH-CHIA!" I may have now officially crossed over to the health-food dark side.

That's OK...I've turned it into something decadent.

I've seen soooooo many recipes for chia pudding but have always glossed over them because A) it sounds weird and B) that has to have a weird texture to it and have I mentioned that this just seems weird? Like, let's see what kind of marketing we can play with to make people succumb to some weird shit, weird? However, a chia pudding was listed with the cleanse week recipes for my yoga challenge so I sucked it up and bought some chia seeds. I didn't use that particular recipe because I came across one that sounded even better and rolled with it instead.


Oh yeah...I can work with some mocha.

Now, I won't lie. This stuff is strange. The texture is totally weird but the flavor of this is so good that I keep making more. I also tweaked the recipe some to give in to my current pumpkin spice obsession that many of my friends also share. Best part of this is the absolute ease of it. Whip it together in the evening and you've got breakfast, snack or dessert. Perfect for a tight schedule like mine.

So yes, this is weird. But I encourage you to just give into the weirdness and roll with it.

Coffee Variations of Chia Pudding

  • ½ cup brewed coffee
  • ½ cup coconut milk (this works best when it's full-fat and from a can)
  • 1 heaping spoonful of almond butter (or nut/seed butter of choice)
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey
  • 1 heaping spoonful unsweetened cocoa powder
  • ¼ cup chia seeds

Pumpkin Spice Latte Chia Pudding

Adapted from above


  • ½ cup brewed coffee
  • ½ cup coconut milk (full-fat from can works best)
  • 1 heaping spoonful of pumpkin puree
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • 1 teaspoon pumpkin pie spice
  • ¼ cup chia seeds

Directions for both:

  1. Place all ingredients except chia seeds in blender. Blend until thoroughly mixed.
  2. Add chia seeds and blend on lowest setting for a few seconds.
  3. Pour into resealable jar(s). Stir to make sure chia seeds are fully combined.
  4. Refrigerate overnight or at least until everything is solidified.
