Food Geek Friday: Quinoa Porridge 3 Ways

Earlier this month I wrote a guest blog for Eating Rules and October Unprocessed on meal planning for one. A key component to the plan is prepping basic ingredients at the beginning of the week and then getting creative with them. 

Today, we're getting creative with breakfast and cooked quinoa. Cook some quinoa at the beginning of the week and you can play with it like you would oatmeal. Because the quinoa is already cooked, each of these only takes a few minutes to throw together on the stove. I used what I had handy in the fridge and pantry. Think of these as a jumping off point for you to play with your own flavor combinations.

Apple Cinnamon Quinoa Porridge

Ingredients

  • Apple, chopped
  • Cinnamon
  • Maple syrup or sweetener of choice (if necessary)
  • Butter (or fat of choice)
  • Cream or milk of choice 
  • Cooked quinoa 
  • Chopped nuts (walnuts rock here but whatever is handy)

Directions

  1. In a pan, melt butter over medium heat. Add apple, cinnamon, and sweetener if using. 
  2. When apples are a little soft add in quinoa and cream or milk. Cook until heated through.
  3. Place in bowl, top with chopped nuts, and eat.
 

Chocolate Quinoa Porridge

Ingredients

  • Cocoa powder
  • Maple syrup or sweetener of choice
  • Vanilla extract
  • Cream or milk of choice
  • Cooked quinoa
  • Sliced banana or other topping of choice

Directions

  1. In a pan, place all ingredients except topping. Heat over medium heat until heated all the way through. 
  2. Place in bowl, top with banana or topping of choice, and eat. 

Pro tip: Adding cinnamon and cayenne to this one is really good too.

 

Pumpkin Pie Quinoa Porridge

Ingredients 

  • Pureed pumpkin
  • Maple syrup or sweetener of choice 
  • Pumpkin pie spice
  • Cream or milk of choice
  • Cooked quinoa
  • Chopped nuts of choice

Directions

  1. In a pan, place all ingredients except chopped nuts. Heat over medium heat until heated all the way through. 
  2. Place in a bowl, top with chopped nuts, and eat. 
 

How would you eat yours? Just typing these up I started thinking that stirring in peanut butter to the quinoa base and topping with apple or banana would be pretty awesome too!
