Food Geek Friday: Avocado & Goat Cheese Pasta
As I've often said, my cooking style is "throw everything together in a pot and hope for the best."
This was definitely one of those times.
I was hungry, and didn't want to go out. Looking in the fridge had a bunch of random bits - half an avocado here, last bits of goat cheese there, but nothing that seemed like it would make a "real" meal.
Turns out, I could.
Sometimes you luck out, and this time I REALLY lucked out. It turned out DELICIOUSLY.
I've even recreated it a few times since I first made it, all to the same delicious result.

Avocado & Goat Cheese Pasta
- Goat Cheese
- Lemon juice
- Extra virgin olive oil
- Salt & pepper
- Bring pot of water to boil. Add pasta and cook as directed on package.
- While pasta is cooking, add remaining indredients on list to food processor. Process until smooth.
- Drain pasta and put back into pot. Add sauce and stir until combined. May need to warm up a little bit if the pasta doesn't warm the sauce up enough for you.
Variation: Top with protein of choice. I had half a leftover grilled chicken breast and it was lovely on top.
