Food Geek Friday: Avocado & Goat Cheese Pasta

As I've often said, my cooking style is "throw everything together in a pot and hope for the best." 

This was definitely one of those times. 

I was hungry, and didn't want to go out. Looking in the fridge had a bunch of random bits - half an avocado here, last bits of goat cheese there, but nothing that seemed like it would make a "real" meal.

Turns out, I could.  

Sometimes you luck out, and this time I REALLY lucked out. It turned out DELICIOUSLY. 

I've even recreated it a few times since I first made it, all to the same delicious result.

Avocado & Goat Cheese Pasta

Avocado & Goat Cheese Pasta - Organizing with a Side of Fabulous


  • Pasta 
  • Avocado 
  • Goat Cheese
  • Garlic
  • Basil
  • Lemon juice
  • Extra virgin olive oil
  • Salt & pepper


  1. Bring pot of water to boil. Add pasta and cook as directed on package.
  2. While pasta is cooking, add remaining indredients on list to food processor. Process until smooth. 
  3. Drain pasta and put back into pot. Add sauce and stir until combined. May need to warm up a little bit if the pasta doesn't warm the sauce up enough for you. 

Variation: Top with protein of choice. I had half a leftover grilled chicken breast and it was lovely on top.
